Solubility and precipitation in Stevia

Many stevia suppliers are boasting about the high solubility of their RebA. But in most cases this claimed high soluble RebA is accompanied by precipitation problems that occur during the first hours stored at room temperature.

There are several RebA crystal forms, of which some are more soluble than others. The crystal forms are governed by the crystallization process.
